Second, this is why I dislike all the multiverse shenanigans in comics. There are no, and can be no green stars in Prime-Earth (sometimes also/alternatively called Earth-33). However, because gobbledegook, there can be and are in Earth-1 aka Earth-0 aka Earth-Prime and presumably others.
Although I reserve the right to change my mind once we (if we) learn more about the physics of parallel worlds. Until then the whole "so-and-so is dead, haha just kidding alternate reality" nonsense just frustrates me by removing all the tension and drama from everything, because nothing matters.
Okay - but (and this is me mostly just thinking in type here...) I'm good with the idea that there are green stars in alternate universes, but that would mean different physics, and then all the rules would change. You kind of pointed right at a bias we're stuck with - our universe can't have it, but others might. But we can't imagine what would allow for that in other universes, since nothing allows for it in ours.
Not only that, if, say, Earth-1's universe has the altered physics to allow for green stars, what trickle-down effects has that also caused? The changes that allow for green stars wouldn't limit themselves *just* to stars, so...where else would those weird changes in physics show up?
Which I think also goes back to your carbon question in the Astrophage article - somewhere, a writer/creator just has to draw the line and say, "this just is, and it works in this story." That's the answer I'd expect Andy Weir or Tom King to give me if I asked them.

In my own mind, I hand wave it with, "this is why we don't have super powers and/or magic in our universe".
But yes I agree with you. The story is more important.
